Ingredients

  • 450 grams fresh green beans, trimmed
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 60 milliliters white wine
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 2 tablespoons chopped fresh parsley (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil.

Step 2

Add the trimmed green beans to the boiling water and cook for 4-5 minutes, until they are bright green and just tender but still crisp.

Step 3

Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Once cooled, drain and set aside.

Step 4

In a small skillet over medium heat, warm 1 tablespoon of the olive oil. Add the minced garlic and sauté for 1-2 minutes, until fragrant but not browned.

Step 5

Deglaze the skillet with the white wine, letting it simmer for 2-3 minutes until slightly reduced. Remove the skillet from the heat and allow it to cool for a minute.

In a small bowl, whisk together the remaining 2 tablespoons of olive oil, the sautéed garlic and white wine mixture, lemon juice, Dijon mustard, honey, salt, and black pepper to create the vinaigrette.
