Ingredients

  • 1 pound fresh green beans
  • 4 slices bacon
  • 1 cup cherry tomatoes
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Trim the ends off the green beans and rinse them under cold water. Set aside.

Step 2

Chop the bacon into small pieces. Heat a large skillet over medium heat and cook the bacon until crispy, about 5-7 minutes. Transfer the cooked bacon to a paper towel-lined plate, leaving the bacon grease in the skillet.

Step 3

While the bacon is cooking, halve the cherry tomatoes and mince the garlic. Set aside.

Step 4

Add the olive oil to the skillet with the reserved bacon grease. Heat over medium heat and add the minced garlic. Cook for 1 minute, stirring constantly, until fragrant.

Step 5

Add the green beans to the skillet and toss to coat them with the garlic and oil. Cover the skillet and cook for 5-7 minutes, stirring occasionally, until the green beans are tender but still crisp.

Step 6

Add the halved cherry tomatoes to the skillet and cook for another 2-3 minutes, until the tomatoes are softened and slightly blistered.

Step 7

Season the green beans and tomatoes with salt and black pepper. Stir to combine.

Step 8

Remove the skillet from the heat and sprinkle the cooked bacon over the top of the green beans and tomatoes.

Step 9

Transfer to a serving dish and enjoy warm.
