Wash and trim the ends of the green beans. Set them aside.
Fill a large pot with 4 cups of water, bring it to a boil, and add a pinch of salt. Add the green beans and blanch them for 3-4 minutes until bright green and slightly tender. Drain and transfer the beans to a bowl of ice water to stop the cooking process. Drain again and set aside.
While the beans cook, cut the bacon into bite-sized pieces. Heat a large skillet over medium heat and cook the bacon until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and place on a paper towel-lined plate to drain, leaving the rendered fat in the skillet.
Peel and thinly slice the onion. Mince the garlic. Halve the cherry tomatoes.
In the same skillet with the bacon fat, add the olive oil (if needed) and sauté the onion over medium heat for 4-5 minutes until translucent and lightly golden.
Add the garlic and cook for 1 more minute until fragrant, stirring to prevent burning.
Add the halved cherry tomatoes to the skillet, cooking for 5 minutes until they become soft and start releasing their juices. Stir occasionally.
Season the skillet mixture with salt, black pepper, and red pepper flakes (if using).
Add the blanched green beans and stir well to combine. Cook for another 3-4 minutes to warm through and allow the flavors to meld.
Toss in the crispy bacon pieces and gently stir to distribute evenly.
Taste and adjust seasoning if necessary. Serve warm, either as a side dish or with crusty bread.
