Ingredients

  • 500 grams fresh green beans
  • 250 grams cherry tomatoes
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 2 large garlic cloves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley
  • 1 teaspoon lemon juice

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Wash the green beans thoroughly and trim the ends. Pat dry with a clean kitchen towel.

Step 3

Place the cherry tomatoes on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil, sprinkle with a pinch of salt, and toss to coat. Roast in the preheated oven for 15 minutes, or until they are soft and slightly caramelized.

Step 4

While the tomatoes are roasting, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 5

Peel and mince the garlic cloves, then add them to the skillet. Sauté for 1-2 minutes until fragrant, making sure not to burn the garlic.

Step 6

Add the green beans to the skillet and toss to coat them in the garlic oil. Sprinkle with ground cumin, salt, and black pepper. Cook the beans for about 8-10 minutes, stirring frequently, until they are tender but still crisp.

Step 7

Once the tomatoes are roasted, carefully add them to the skillet with the green beans. Gently toss to combine and heat through for 1-2 minutes.

Step 8

Remove the skillet from the heat and drizzle the lemon juice over the dish. Sprinkle with chopped fresh parsley for a burst of flavor and color.

Step 9

Serve warm as a side dish to accompany your favorite protein or grain.
