Prep Time:10 mins

Ingredients

  • 450 grams fresh green beans, trimmed
  • 50 grams pine nuts
  • 60 grams unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup water
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Bring a large pot of water to a boil and add 1/2 teaspoon of salt. Blanch the green beans in the boiling water for 3–4 minutes until tender-crisp. Drain the beans and immediately transfer them to a bowl of ice water to stop the cooking process. Once cooled, drain and set aside.

Step 2

In a dry skillet over medium heat, toast the pine nuts for 2–3 minutes until golden and fragrant, stirring frequently to prevent burning. Remove from the skillet and set aside.

Step 3

In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to brown it.

Step 4

Stir in the toasted pine nuts, lemon juice, salt, and black pepper into the melted butter and garlic mixture. Allow the sauce to simmer gently for 1–2 minutes.

Step 5

Reduce the heat to low and add the cooked green beans to the skillet. Toss them in the pine nut butter sauce until evenly coated and heated through, about 2 minutes.

Step 6

Transfer the green beans to a serving platter, garnish with fresh parsley, and serve warm.
