Ingredients

  • 450 grams fresh green beans, trimmed
  • 60 grams pecans, roughly chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1000 milliliters water (for blanching)
  • 500 grams ice cubes (for blanching)

Directions

Step 1

Bring a large pot of salted water to a boil (approximately 1 teaspoon of salt for 1000 milliliters of water).

Step 2

While waiting for the water to boil, prepare an ice bath by filling a large bowl with cold water and adding the ice cubes.

Step 3

Add the green beans to the boiling water and blanch them for 2-3 minutes, just until they turn bright green and tender-crisp.

Step 4

Using a slotted spoon, quickly transfer the green beans to the ice bath to stop the cooking process. Let them cool for 2 minutes, then drain them and pat dry with a clean kitchen towel or paper towels.

Step 5

In a dry skillet over medium heat, toast the pecans for 2-3 minutes, stirring occasionally, until golden and fragrant. Remove from the skillet and set aside.

Step 6

In the same skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant, being careful not to let it burn.
