Ingredients

  • 450 grams fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 200 grams baby bella (or cremini) mushrooms, sliced
  • 1 cup low-sodium vegetable broth
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Bring a large pot of water to a boil and add a generous pinch of salt.

Step 2

Add the green beans to the boiling water and blanch them for 2-3 minutes, just until they turn bright green and slightly tender.

Step 3

Immediately transfer the blanched green beans to a bowl of ice water to stop the cooking process. Drain well and set aside.

Step 4

Heat the olive oil in a large skillet over medium heat.

Step 5

Add the minced garlic and sauté for 30 seconds or until fragrant, being careful not to burn it.

Step 6

Add the sliced mushrooms to the skillet and cook for 5-6 minutes, stirring occasionally, until they are soft and have released their moisture.

Step 7

Pour in the vegetable broth and bring to a gentle simmer.

Step 8

Add the blanched green beans to the skillet and toss to coat them in the broth and mushroom mixture. Cook for an additional 3-4 minutes or until the green beans are tender but still crisp.

Step 9

Stir in the lemon juice, salt, and black pepper. Adjust seasoning to taste if needed.

Step 10

Transfer the green beans and mushrooms to a serving dish and garnish with fresh parsley if desired. Serve warm.
