Ingredients

  • 500 grams fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon water
  • 2 tablespoons toasted almond slices (optional)

Directions

Step 1

Bring a large pot of salted water to a boil.

Step 2

Add the trimmed green beans and cook for 3-4 minutes, or until they are bright green and slightly tender but still crisp.

Step 3

Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process and preserve their vibrant color. After 2 minutes, drain and set them aside.

Step 4

In a small mixing bowl, whisk together olive oil, Dijon mustard, lemon juice, lemon zest, minced garlic, honey, salt, black pepper, and water until the sauce is smooth and emulsified.

Step 5

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Step 6

Add the drained green beans to the skillet and sauté for 2-3 minutes to warm them through.

Step 7

Pour the lemon mustard sauce over the green beans and toss to coat evenly. Cook for 1-2 minutes to let the flavors meld together.

Step 8

Remove from heat and transfer the green beans to a serving dish.

Step 9

If desired, sprinkle toasted almond slices over the top for added crunch and flavor.

Step 10

Serve immediately and enjoy!
