Ingredients

  • 450 grams green beans
  • 2 tablespoons olive oil
  • 3 tablespoons pine nuts
  • 2 garlic cloves
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 liter water
  • 10 ice cubes

Directions

Step 1

Bring 1 liter of water to a boil in a large pot. Add 1 teaspoon of salt to the boiling water.

Step 2

Trim the ends off the green beans and rinse them under cold water.

Step 3

Blanch the green beans by adding them to the boiling water and cooking for 3-4 minutes, or until they are bright green and slightly tender.

Step 4

Prepare a bowl of ice water while the beans are cooking. Transfer the blanched green beans to the ice water to stop cooking and preserve their color. Let them sit for 2-3 minutes, then drain and set aside.

Step 5

Heat a large skillet over medium heat and add the pine nuts. Toast them for 2-3 minutes, stirring frequently, until they are golden and fragrant. Remove the toasted pine nuts from the skillet and set aside.

Step 6

In the same skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant, being careful not to let it burn.
