Ingredients

  • 1 pound fresh green beans (trimmed)
  • 4 slices bacon (chopped)
  • 3 medium shallots (thinly sliced)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.25 cup water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the green beans and blanch for 2-3 minutes until bright green and slightly tender. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again and set aside.

Step 2

In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet with a slotted spoon and place on a paper towel-lined plate. Reserve about 1 tablespoon of the bacon grease in the skillet.

Add the butter and olive oil to the skillet with the bacon grease. Heat over medium-low heat and add the thinly sliced shallots.
