  • 1 pound green beans
  • 4 whole shallots
  • 2 tablespoons olive oil

  • 6 cups water
  • 6 cups ice cubes

Directions

Step 1

Fill a large pot with 6 cups of water and bring it to a boil. Add 1 teaspoon of salt to the boiling water.

Trim the ends of the green beans and rinse them under cool water.

Step 3

Once the water is boiling, add the green beans and blanch them for 3 minutes until they turn bright green and are slightly tender.

Prepare an ice bath in a large bowl by combining 6 cups of water with 6 cups of ice cubes.

Using a slotted spoon, transfer the green beans directly to the ice bath to stop the cooking process. Let them sit for 2 minutes, then drain and set aside.
