Ingredients

  • 450 grams green beans
  • 4 tablespoons unsalted butter
  • 2 medium shallots
  • 1 teaspoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 teaspoon lemon zest
  • 500 milliliters water

Directions

Step 1

Trim the ends of the green beans and rinse them under cold water.

Step 2

Peel and thinly slice the shallots.

Step 3

Bring 500 milliliters of water to a boil in a medium pot. Add a generous pinch of salt and drop in the green beans. Blanch for 3-4 minutes until they are bright green and tender-crisp. Drain and immediately transfer to an ice bath to stop the cooking process. Drain again and set aside.

Step 4

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Once the butter has melted, add the sliced shallots.

Step 5

Cook the shallots, stirring occasionally, for 8-10 minutes until they are golden brown and caramelized. Reduce the heat if they begin to brown too quickly.

Step 6

Add the remaining 2 tablespoons of butter to the skillet and allow it to melt. Season the shallot butter with 0.5 teaspoons of salt and 0.25 teaspoons of black pepper.

Step 7

Add the blanched green beans to the skillet, tossing them gently in the caramelized shallot butter to coat them evenly. Cook for 2-3 minutes until the beans are heated through.

Step 8

Sprinkle the dish with 1 teaspoon of fresh lemon zest for a bright, zesty finish.

Step 9

Serve immediately as a side dish to complement your favorite main course.
