Ingredients

  • 450 grams green beans
  • 1 large red onion
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon sugar
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 500 milliliters water
  • 8 cubes ice cubes

Directions

Step 1

Wash the green beans thoroughly and trim the ends. Set them aside.

Step 2

Bring a pot of 500 milliliters of water to a boil. Add a pinch of salt, then add the green beans. Let them cook for 3-4 minutes until they are bright green and slightly tender.

Step 3

Prepare an ice bath by filling a large bowl with cold water and ice cubes. Immediately transfer the green beans from the boiling water into the ice bath to stop the cooking process. Let them cool for 2-3 minutes, then drain and set aside.

Step 4

Peel the red onion and slice it into thin, even slices.

Step 5

In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat.

Step 6

Add the sliced red onions to the skillet. Sprinkle 1 teaspoon of sugar over the onions and cook for 10-12 minutes, stirring occasionally, until the onions are soft and caramelized to a deep golden-brown color.

Step 7

Once the onions are caramelized, add 1 teaspoon of balsamic vinegar and stir to combine. Cook for an additional 1 minute to let the vinegar cook off slightly.

Step 8

Add the blanched green beans to the skillet with the caramelized onions. Toss them together to coat the green beans in the onion mixture.

Step 9

Season the dish with 0.5 teaspoons of salt and 0.25 teaspoons of ground black pepper, adjusting to taste.

Step 10

Cook for an additional 2-3 minutes until the green beans are warmed through.

Step 11

Transfer the dish to a serving platter and serve warm as a side dish.
