Ingredients

  • 1 pound fresh green beans (trimmed)
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1.5 tablespoons Dijon mustard
  • 1 teaspoon honey
  • 2 cloves garlic (minced)
  • 2 tablespoons fresh dill (chopped)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper (freshly ground)
  • 4 cups water
  • 2 cups ice cubes

Directions

Step 1

Fill a large pot with 4 cups of water and bring to a boil over high heat.

Step 2

While the water is heating, trim the ends of the green beans.

Step 3

Prepare a large bowl of ice water (use 2 cups of ice cubes plus enough water to submerge the beans).

Step 4

Once the water is boiling, add the green beans and blanch for 3-4 minutes until they turn bright green and are tender-crisp.

Step 5

Immediately transfer the green beans to the bowl of ice water to stop the cooking process. Let them sit for 1-2 minutes, then drain and set aside.

Step 6

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.

Step 7

Reduce the heat to low and add balsamic vinegar, Dijon mustard, and honey. Stir well to create a smooth glaze.

Step 8

Add the green beans to the skillet, tossing to coat them evenly in the balsamic Dijon glaze.

Step 9

Season with salt and black pepper, and continue cooking for 2-3 minutes until the beans are heated through and slightly caramelized.

Step 10

Remove the skillet from the heat and toss the green beans with chopped fresh dill.

Step 11

Transfer to a serving dish and serve warm as a delicious Thanksgiving side.
