Ingredients

  • 500 grams fresh green beans (trimmed)
  • 50 grams slivered almonds
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic (minced)
  • 2 teaspoons fresh thyme leaves
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper (freshly ground)
  • 1 teaspoon lemon juice (optional)

Directions

Step 1

Bring a large pot of salted water to a boil over high heat.

Step 2

Add the trimmed green beans to the boiling water and blanch for 3-4 minutes, until crisp-tender and bright green.

Step 3

Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Let cool for 2 minutes, then drain and pat dry with a clean kitchen towel.

Step 4

Heat a large skillet over medium heat and add the slivered almonds. Toast the almonds, stirring frequently, for 2-3 minutes or until golden brown and fragrant. Transfer the toasted almonds to a plate and set aside.

Step 5

In the same skillet, heat the olive oil and butter over medium heat until the butter is melted and bubbling.

Step 6

Add the minced garlic and fresh thyme leaves to the skillet, and cook for 30 seconds, stirring continuously, until fragrant.

Step 7

Add the blanched green beans to the skillet, and toss to coat them evenly in the garlic-thyme mixture. Cook for 2-3 minutes, stirring occasionally, until the green beans are heated through.

Step 8

Season the green beans with salt and black pepper to taste. If desired, drizzle with lemon juice for a bright, tangy flavor.

Step 9

Remove the skillet from the heat and sprinkle the toasted almonds over the green beans. Toss gently to combine.

Step 10

Transfer the green beans with almonds and thyme to a serving platter, and serve warm.
