Wash the green beans thoroughly. Trim the ends and chop them finely into small pieces, approximately 1/4 inch in size.
Slice the green chilies lengthwise and set them aside.
In a large, deep skillet or pan, heat the coconut oil over medium heat.
Add mustard seeds to the heated oil. When they begin to splutter, add the cumin seeds, dried red chilies, and curry leaves. Stir for 30 seconds until aromatic.
Add the finely chopped shallots and sauté until they turn soft and translucent, about 2-3 minutes.
Stir in the green chilies and turmeric powder. Mix well.
Add the chopped green beans to the pan. Sprinkle with salt and give everything a good stir to coat the beans in the spices.
Add 2 tablespoons of water, cover the pan with a lid, and allow the beans to cook over low heat for 5-7 minutes, stirring occasionally. Ensure the beans are tender but still retain a slight crunch.
Once the beans are cooked, add the grated fresh coconut to the pan. Mix thoroughly to incorporate the coconut evenly.
Cook for another 2-3 minutes without the lid, allowing the flavors to combine and any excess moisture to evaporate.
Remove from heat. Taste and adjust salt if necessary.
