Ingredients

  • 500 grams green beans
  • 2 tablespoons olive oil
  • 1 medium onion
  • 3 units garlic cloves
  • 4 medium fresh tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 0.5 teaspoon cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon sugar (optional)
  • 100 milliliters water
  • 2 tablespoons fresh cilantro (optional)

Directions

Step 1

Wash and trim the green beans, removing the ends. Set aside.

Step 2

Dice the onion and mince the garlic cloves.

Step 3

Score the tomatoes with a shallow X on the bottom and blanch them in boiling water for 1 minute. Remove, peel off the skins, and chop into small cubes.

Step 4

Heat the olive oil in a large skillet or pan over medium heat.

Step 5

Add the diced onion and sauté for 3-4 minutes until softened and translucent.

Step 6

Add the minced garlic and cook for another 1 minute, stirring frequently to prevent burning.

Step 7

Add the chopped tomatoes, tomato paste, paprika, cumin, salt, black pepper, and optional sugar to the pan. Stir well to combine.

Step 8

Pour in the water and bring the mixture to a gentle simmer. Let it cook for 8-10 minutes, stirring occasionally, until the sauce thickens and the tomatoes break down into a salsa-like consistency.

Step 9

Add the trimmed green beans to the pan. Stir to coat them with the salsa.

Step 10

Cover the pan with a lid and reduce the heat to low. Cook for 10-12 minutes, or until the green beans are tender but still slightly crisp. Stir occasionally to ensure even cooking.

Step 11

Taste and adjust the seasoning with more salt or pepper, if needed.

Step 12

Remove from heat and sprinkle with freshly chopped cilantro, if desired.

Step 13

Serve warm as a side dish or a light standalone meal.
