Ingredients

  • 500 grams fresh green beans
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 large yellow onion
  • 2 tablespoons all-purpose flour
  • 1.5 cups milk
  • 0.5 cup vegetable broth
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons parmesan cheese (optional)

Directions

Step 1

Wash and trim the green beans, cutting off both ends. If the beans are long, cut them in half.

Step 2

Bring a large pot of salted water to a boil. Add the green beans and blanch for 4-5 minutes until tender but still crisp. Drain and set aside.

Step 3

In a large skillet or saucepan, heat the olive oil and butter over medium heat.

Step 4

Thinly slice the yellow onion and add it to the skillet. Cook, stirring frequently, for 8-10 minutes until the onions are caramelized and golden brown.

Step 5

Sprinkle the all-purpose flour over the onions and stir well to combine. Cook for 1-2 minutes to eliminate the raw flour taste.

Step 6

Slowly whisk in the milk and vegetable broth, making sure to break up any lumps and create a smooth sauce.

Step 7

Add the garlic powder, salt, and black pepper. Stir and cook for 3-4 minutes until the sauce thickens.

Step 8

If using parmesan cheese, stir it into the sauce at this stage for added richness.

Step 9

Add the blanched green beans to the onion sauce and toss to coat them evenly.

Step 10

Simmer over low heat for 2-3 minutes, letting the flavors meld together.

Step 11

Transfer to a serving dish and serve warm as a side dish to your favorite main course.
