Ingredients

  • 500 g fresh green beans
  • 250 g cremini mushrooms (sliced)
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 3 cloves garlic cloves (minced)
  • 1 tsp fresh thyme leaves
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp lemon juice (optional)

Directions

Step 1

Trim the ends off the green beans and rinse under cold water. Set aside.

Step 2

Heat a large skillet over medium heat and add the olive oil and unsalted butter.

Step 3

Once the butter has melted, add the minced garlic and sauté for 1 minute until fragrant but not browned.

Step 4

Add the sliced cremini mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and brown slightly.

Step 5

In the meantime, bring a pot of water to a boil. Add the green beans and blanch for 3-4 minutes until they are tender-crisp. Drain and immediately transfer them to a bowl of ice water to stop the cooking process.

Step 6

Drain the green beans from the ice water and add them to the skillet with the mushrooms.

Step 7

Sprinkle the mixture with fresh thyme leaves, salt, and black pepper. Toss everything to combine and cook for an additional 3-4 minutes, stirring occasionally.

Step 8

If desired, add a splash of lemon juice for brightness and stir well.

Step 9

Remove from heat and transfer to a serving platter. Serve warm as a side dish.
