Ingredients

  • 450 grams fresh green beans, trimmed
  • 60 grams pecan halves, toasted
  • 60 ml extra-virgin olive oil
  • 30 ml apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper, freshly ground
  • 0.5 small red onion, thinly sliced
  • 60 grams feta cheese, crumbled

Directions

Step 1

Bring a large pot of salted water to a boil.

Step 2

Add the green beans and blanch them for 2-3 minutes, until they are bright green and slightly tender but still crisp.

Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Once cool, drain again and pat the beans dry.
