Ingredients

  • 450 grams green beans, trimmed and cut into 2-inch pieces
  • 450 grams russet potatoes, peeled and diced into 1-inch cubes
  • 3 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 300 ml milk
  • 200 grams shredded cheddar cheese
  • 120 ml sour cream
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 teaspoons garlic powder
  • 1 cup crispy fried onions
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 9x13-inch baking dish with a little olive oil or butter.

Step 2

Bring a large pot of salted water to a boil. Add the diced potatoes and cook for 8-10 minutes, or until just tender. Remove the potatoes with a slotted spoon and set aside.

Step 3

In the same pot of boiling water, add the green beans and blanch them for 4-5 minutes. Drain and set aside.

In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1-2 minutes to form a roux.

Gradually add the milk to the roux, whisking constantly to avoid lumps. Cook for 3-4 minutes until the mixture thickens.
