Ingredients

  • 4 cups green beans
  • 8 ounces button mushrooms, sliced
  • 2 tablespoons butter, unsalted
  • 2 tablespoons all-purpose flour
  • 1.5 cups half-and-half cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 cup fried onions
  • 1 tablespoon olive oil

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes, until tender but still crisp. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes, until golden and softened. Remove from the skillet and set aside.

In the same skillet, melt the butter over medium heat. Sprinkle in the flour and whisk constantly for 2-3 minutes to form a smooth roux.
