Ingredients

  • 450 g Green beans
  • 250 g Cherry tomatoes
  • 200 g Mozzarella cheese
  • 15 g Fresh basil leaves
  • 60 g Breadcrumbs
  • 50 g Parmesan cheese, grated
  • 2 cloves Garlic, minced
  • 4 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Trim the green beans and blanch them in boiling salted water for 3-4 minutes, until just tender but still crisp. Drain and plunge them into ice water to retain their color. Drain again and set aside.

Step 3

Halve the cherry tomatoes and tear the mozzarella into small pieces. Set aside.

Step 4

In a small bowl, mix the breadcrumbs, grated Parmesan, 2 tablespoons of olive oil, and the minced garlic. Stir until combined and set aside.

Step 5

Lightly oil a medium-sized baking dish with 1 tablespoon of olive oil. Spread the blanched green beans evenly across the dish and season with 1 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 6

Scatter the halved cherry tomatoes over the green beans, followed by the mozzarella pieces.

Step 7

Sprinkle the breadcrumb mixture evenly over the top of the dish.

Step 8

Drizzle the remaining 1 tablespoon of olive oil over the breadcrumbs to help them crisp in the oven.

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the mozzarella is bubbly.

Remove from the oven and let sit for 5 minutes. Garnish with fresh basil leaves before serving.
