Ingredients

  • 300 grams green beans
  • 250 grams cherry tomatoes
  • 20 grams fresh basil leaves
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 20 grams parmesan cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil.

Step 2

Trim the ends off the green beans and rinse them under cold water.

Step 3

Blanch the green beans in the boiling water for 2–3 minutes, or until tender but still crisp and bright green.

Step 4

Immediately transfer the beans to a bowl of ice water to stop the cooking process. Drain and pat dry.

Step 5

Wash the cherry tomatoes and cut them in half. Set aside.

Step 6

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper to make the dressing.

Step 7

In a large mixing bowl, combine the blanched green beans, halved cherry tomatoes, and fresh basil leaves (tear larger leaves into smaller pieces if desired).
