Ingredients

  • 1 pound fresh green beans, trimmed
  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 2 cloves garlic cloves, minced
  • 3 tablespoons all-purpose flour
  • 1 cup vegetable or chicken broth
  • 1 cup whole milk
  • 0.5 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1.5 cups French-fried onions
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to boil. Add the green beans and blanch for 3-4 minutes until bright green and slightly tender. Drain and transfer to an ice bath to stop the cooking. Drain again and set aside.

Step 3

Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes. Add minced garlic and cook for an additional minute.

Step 4

Add 3 tablespoons of butter to the skillet and let it melt. Sprinkle in the flour and whisk constantly to form a roux. Cook for 1-2 minutes until the raw flour smell dissipates.

Step 5

Gradually pour in the broth, whisking continuously to avoid lumps. Then slowly add the milk and cream while whisking. Simmer for 3-4 minutes until thickened.

Step 6

Stir in the Parmesan cheese, salt, and black pepper. Mix until the cheese is fully melted and the sauce is smooth. Remove from heat.

Step 7

Add the blanched green beans to the skillet with the sauce and toss to coat.

Step 8

Transfer the mixture to a greased 9x13-inch baking dish. Spread the green beans evenly in the dish.

Step 9

Top with an even layer of French-fried onions.

Step 10

Bake in the preheated oven for 20-25 minutes until the casserole is bubbly and the onions are golden brown.

Step 11

Serve warm and enjoy!
