Ingredients

  • 500 grams Fresh green beans
  • 100 grams Walnuts
  • 2 pieces Garlic cloves
  • 20 grams Fresh cilantro
  • 20 grams Fresh parsley
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground fenugreek (or blue fenugreek)
  • 2 tablespoons Red wine vinegar
  • 2 tablespoons Water
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 50 grams Pomegranate seeds (optional, for garnish)

Directions

Step 1

Wash the green beans thoroughly and trim the ends. Bring a large pot of salted water to a boil.

Step 2

Blanch the green beans by boiling them for 4-5 minutes, until they are tender but still crisp. Drain and transfer the beans to a bowl of ice water to stop the cooking process. Drain again and set aside.

Step 3

In a food processor, combine the walnuts, garlic cloves, cilantro, parsley, ground coriander, ground fenugreek, red wine vinegar, water, salt, and black pepper. Process until the mixture forms a thick, smooth paste.

Step 4

Place the blanched green beans in a large mixing bowl and add the walnut paste. Use your hands or a spoon to mix thoroughly, ensuring the beans are evenly coated with the paste.

Step 5

Transfer the salad to a serving platter. If desired, sprinkle pomegranate seeds on top for a pop of color and an additional layer of flavor.

Step 6

Serve immediately or let the salad sit for 30 minutes to allow the flavors to meld. Enjoy this dish as a side or a light meal.
