  • 450 grams green beans
  • 1 medium red onion
  • 3 tablespoons extra-virgin olive oil

  • 2 teaspoons Dijon mustard
  • 1 teaspoon honey
  • 1 clove garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups water
  • 2 cups ice

Directions

Step 1

Trim the ends of the green beans and rinse them thoroughly under cold water.

Step 2

Bring 4 cups of water to a boil in a large pot. Add 1/2 teaspoon of salt to the water.

Carefully place the green beans into the boiling water and blanch them for 3-4 minutes, or until they are bright green and crisp-tender.

While the green beans are cooking, prepare a large bowl filled with 2 cups of ice and water to create an ice bath.

Using a slotted spoon, transfer the blanched green beans to the ice bath to stop the cooking process. Let them sit for 3 minutes, then drain and set aside.
