Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 cups ham, diced
  • 6 cups chicken or vegetable broth
  • 1 large russet potato, peeled and diced
  • 2 cups fresh green beans, trimmed and halved
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large soup pot over medium heat.

Step 2

Add the diced onion, carrots, and celery. Sauté for 5-6 minutes, or until the vegetables begin to soften.

Step 3

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 4

Add the diced ham to the pot and stir to combine with the sautéed vegetables.

Step 5

Pour in the chicken or vegetable broth, and add the diced potato, green beans, bay leaves, thyme, salt, and black pepper.

Step 6

Bring the soup to a boil, then reduce the heat to low and cover the pot. Simmer for 25-30 minutes, or until the potatoes and green beans are tender.

Step 7

Taste the soup and adjust the seasoning with additional salt or pepper, if needed.

Step 8

Remove the bay leaves before serving.

Step 9

Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve warm with crusty bread or a side salad.
