Rinse and trim the ends of the green beans. Cut them into 2-inch pieces.
Slice the Chinese sausage thinly on a slight diagonal to maximize surface area.
Mince the garlic and grate the ginger (or finely mince if grating is not an option).
In a small bowl, mix the soy sauce, oyster sauce, sesame oil, cornstarch, and water. Stir well to create the stir fry sauce. Set aside.
Heat a large wok or skillet over medium-high heat and add 1 tablespoon of vegetable oil.
