Ingredients

  • 250 grams yellow split peas
  • 1 liter water
  • 60 ml olive oil
  • 3 pieces garlic cloves
  • 1 medium white onion
  • 1 piece bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 1 tablespoon capers (optional)
  • 2 tablespoons fresh parsley (chopped)

Directions

Step 1

Rinse the yellow split peas under cold running water until the water runs clear. Set aside.

Step 2

Peel and finely chop the white onion and garlic cloves.

Step 3

In a medium pot, combine the yellow split peas, water, bay leaf, and chopped white onion. Bring the mixture to a boil over medium heat, skimming off any foam that appears on the surface.

Reduce the heat to low and simmer for 35-40 minutes, stirring occasionally to prevent sticking, until the yellow split peas are soft and breaking apart.

Step 5

Remove the bay leaf from the pot and, using an immersion blender or food processor, puree the cooked peas until smooth and creamy.
