Ingredients

  • 1 pound ground turkey
  • 0.5 cup crumbled feta cheese
  • 0.25 cup red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 teaspoons olive oil
  • 0.75 cup plain Greek yogurt
  • 0.25 cup cucumber, grated and squeezed of excess liquid
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • 4 pieces pita bread or burger buns
  • 1 whole sliced tomato
  • 0.5 whole sliced cucumber
  • 4 pieces lettuce leaves

Directions

Step 1

In a large mixing bowl, combine the ground turkey, feta cheese, red onion, parsley, garlic, oregano, salt, and black pepper. Mix gently but thoroughly to combine.

Step 2

Divide the turkey mixture into 4 equal portions and shape them into patties, about 3/4-inch thick.

Step 3

Heat the olive oil in a large nonstick skillet or grill pan over medium heat. Add the turkey patties and cook for 4-5 minutes per side, or until fully cooked with an internal temperature of 165°F (74°C).

Step 4

While the patties are cooking, make the yogurt sauce. In a small bowl, whisk together the Greek yogurt, grated cucumber, lemon juice, dill, and a pinch of salt. Adjust seasoning to taste and set aside.

Step 5

Toast the pita bread or burger buns lightly if desired.

Step 6

Assemble the burgers: Spread a layer of yogurt sauce on the bottom half of the bun or pita. Place a turkey patty on top, followed by sliced tomato, cucumber, and a lettuce leaf. Add more yogurt sauce and top with the other half of the bun or pita.

Step 7

Serve immediately and enjoy!
