Ingredients

  • 400 g penne pasta
  • 400 g ripe tomatoes
  • 3 tbsp olive oil
  • 3 garlic cloves
  • 100 g kalamata olives, pitted and sliced
  • 150 g crumbled feta cheese
  • 1 red onion, thinly sliced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 10 g fresh basil leaves, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, dice the ripe tomatoes and thinly slice the red onion. Mince the garlic cloves.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced onion, sautéing for 2-3 minutes until fragrant and softened.

Add the diced tomatoes, salt, black pepper, and dried oregano to the skillet. Cook for about 10 minutes, stirring occasionally, until the tomatoes have broken down into a chunky sauce.

Step 5

Stir in the pitted and sliced kalamata olives, and let simmer for another 2 minutes.

Add the cooked pasta to the skillet, tossing to evenly coat with the tomato mixture. If the sauce seems too thick, stir in a splash of the reserved pasta water to loosen it.

Remove the skillet from the heat and stir in half of the crumbled feta cheese and chopped fresh basil.

Divide the pasta among serving plates. Top each plate with the remaining crumbled feta cheese and a few extra basil leaves for garnish.
