Ingredients

  • 1 pound Large shrimp (peeled and deveined)
  • 1.5 teaspoon Kosher salt
  • 0.5 teaspoon Ground black pepper
  • 4 tablespoons Extra virgin olive oil
  • 4 cloves Garlic cloves (minced)
  • 0.25 teaspoon Crushed red pepper flakes
  • 1 can Canned diced tomatoes (14.5-ounce can)
  • 0.5 cup Dry white wine
  • 1 teaspoon Oregano (dried)
  • 0.75 cup Feta cheese (crumbled)
  • 2 tablespoons Fresh parsley (chopped)
  • 4 pieces Lemon wedges (for serving)

Directions

Step 1

Pat the shrimp dry with paper towels and season them with 1 teaspoon of kosher salt and 1/2 teaspoon of ground black pepper. Set aside.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering. Add the minced garlic and crushed red pepper flakes, stirring constantly, until fragrant (about 30 seconds).

Step 3

Stir in the canned diced tomatoes (with juice), white wine, and dried oregano. Bring the mixture to a simmer and cook for 8-10 minutes, stirring occasionally, until the sauce thickens slightly.

Step 4

Reduce the heat to low and stir in the remaining 2 tablespoons of olive oil. Nestle the shrimp into the sauce in a single layer and cook, turning once, until the shrimp turn opaque (about 2-3 minutes per side).

Step 5

Remove the skillet from heat and sprinkle the crumbled feta cheese evenly over the shrimp and sauce. Cover the skillet with a lid and let it rest for 2-3 minutes, allowing the feta to soften slightly.

Step 6

Garnish the dish with freshly chopped parsley and serve immediately with lemon wedges on the side for a burst of fresh citrus flavor. Optional: Serve alongside crusty bread, rice, or orzo for a complete meal.
