  • 3 tablespoons Olive oil
  • 3 pieces Garlic cloves (minced)
  • 2 tablespoons Lemon juice
  • 2 tablespoons Red wine vinegar
  • 200 grams Greek yogurt
  • 2 teaspoons Dried oregano
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 pieces Pita bread
  • 200 grams Tzatziki sauce
  • 2 pieces Tomato (sliced)
  • 1 piece Red onion (thinly sliced)
  • 100 grams Lettuce (shredded)
  • 2 tablespoons Fresh parsley (chopped)

Directions

Step 1

Cut the pork shoulder into thin strips and set aside.

Step 2

In a large bowl, combine olive oil, minced garlic, lemon juice, red wine vinegar, Greek yogurt, dried oregano, ground cumin, ground coriander, smoked paprika, salt, and black pepper to create the marinade.

Step 3

Add the pork strips to the marinade, ensuring each piece is well coated. Cover the bowl and refrigerate for at least 1 hour or up to overnight for maximum flavor.

Step 4

Heat a large skillet or grill pan over medium-high heat. Add the marinated pork strips and cook for 8-10 minutes, stirring occasionally, until the pork is fully cooked and slightly caramelized.

Step 5

Warm the pita bread in a dry skillet or oven until soft and pliable.

Step 6

To assemble the gyros plate, arrange the cooked pork, warm pita bread, tzatziki sauce, sliced tomatoes, red onions, shredded lettuce, and chopped parsley on a serving platter.

Step 7

Let everyone build their own gyros by filling the pita bread with pork and their choice of toppings.

Step 8

Serve immediately and enjoy your homemade Greek-style pork gyros plate!
