Rinse the lentils under cold water. Place them in a medium saucepan with 3 cups of water. Bring to a boil, lower the heat, and simmer for 20-25 minutes or until tender. Drain and set aside to cool slightly.
While the lentils cook, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté for 5-7 minutes until softened. Stir in the minced garlic and cook for another minute. Remove from heat.
In a large mixing bowl, mash the cooked lentils with a fork or potato masher, leaving some texture. Heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Cook the chilled lentil patties for 4-5 minutes on each side until golden brown and heated through.
