Ingredients

  • 4 tablespoons olive oil
  • 1 large onion
  • 3 medium garlic cloves
  • 3 medium potatoes
  • 300 grams green beans
  • 2 medium zucchini
  • 400 grams crushed tomatoes
  • 1 cup water
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot over medium heat.

Step 2

Finely dice the onion and mince the garlic. Add both to the pot and sauté for 3-4 minutes, until the onion becomes soft and translucent.

Step 3

Peel and cut the potatoes into large chunks. Trim the ends of the green beans and cut them in half, if necessary. Slice the zucchini into half-moons about 1/2-inch thick.

Step 4

Add the potatoes to the pot and stir well to coat them in the oil and onion mixture. Cook for 5 minutes, stirring occasionally.

Step 5

Add the green beans and zucchini to the pot, followed by the crushed tomatoes, water, dried oregano, dried thyme, salt, and black pepper. Stir to combine.

Step 6

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 35-40 minutes, or until the potatoes and green beans are tender and the sauce has thickened slightly.

Step 7

Taste and adjust the seasoning with additional salt or pepper, if needed.

Step 8

Garnish with freshly chopped parsley before serving. Serve warm, ideally with crusty bread or a side of feta cheese for a complete meal.
