Ingredients

  • 12 oz Elbow macaroni
  • 3 tbsp Butter
  • 3 tbsp All-purpose flour
  • 3 cups Whole milk
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 0.5 tsp Garlic powder
  • 1 cup Grated Parmesan cheese
  • 1.5 cups Shredded mozzarella cheese
  • 1 cup Feta cheese, crumbled
  • 2 tbsp Olive oil
  • 1 lb Large shrimp, peeled and deveined
  • 2 tbsp Lemon juice
  • 1 tsp Dried oregano
  • 1 cup Cherry tomatoes, halved
  • 0.5 cup Kalamata olives, sliced
  • 2 tbsp Fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

Step 2

In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, until golden and bubbly.

Gradually whisk in the milk and continue cooking, whisking frequently, until the mixture thickens, about 5 minutes.

Stir in the salt, black pepper, and garlic powder. Lower the heat and add the Parmesan, mozzarella, and feta cheeses. Stir until the cheeses are melted and the sauce is smooth.
