Ingredients

  • 0.5 cup red onion, thinly sliced
  • 0.25 cup kalamata olives, pitted and halved
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon honey

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Spread the cherry tomatoes on the baking sheet and drizzle with 1 tablespoon of olive oil. Sprinkle with 1/2 teaspoon of kosher salt, 1/4 teaspoon of black pepper, and the dried oregano. Toss gently to coat.
