Ingredients

  • 1 cup long-grain white rice
  • 2 cups water

  • 0.5 cup feta cheese
  • 2 tablespoons fresh parsley
  • 1 lemon
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch.

In a medium saucepan, bring 2 cups of water to a boil. Add the rice and 0.25 teaspoon of salt. Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and set aside to cool.
