Ingredients

  • 1 cup long-grain rice
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 2 cups vegetable broth (or chicken broth)
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup crumbled feta cheese (optional, for garnish)
  • 0.25 cup kalamata olives (optional, for garnish)

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Drain well.

Step 2

In a medium saucepan, heat the olive oil over medium heat.

Step 3

Add the chopped onion and sauté for 3-4 minutes until soft and translucent.

Step 4

Add the minced garlic and sauté for another 30 seconds, until fragrant.

Step 5

Stir in the rinsed rice and cook for 1-2 minutes, stirring frequently, until the rice is lightly toasted.

Step 6

Pour in the vegetable broth (or chicken broth) and add the dried oregano, salt, and black pepper.

Step 7

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.

Step 8

Remove the saucepan from the heat and let it sit, covered, for 5 minutes.

Step 9

Fluff the rice with a fork, then stir in the lemon juice, lemon zest, fresh dill, and fresh parsley.

Step 10

Taste and adjust seasoning if needed, adding more salt or lemon juice to your liking.

Step 11

Transfer the rice to a serving dish and garnish with crumbled feta cheese and/or kalamata olives if desired.

Step 12

Serve warm as a side dish or as part of a larger Mediterranean meal. Enjoy!
