Ingredients

  • 1 lb pork tenderloin
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup plain Greek yogurt
  • 0.5 cucumber
  • 1 tbsp fresh dill
  • 0.5 red onion
  • 2 tomatoes
  • 4 pita bread
  • 0.25 cup feta cheese
  • 1 cup romaine lettuce

Directions

Step 1

Slice the pork tenderloin into thin strips and place in a bowl.

Step 2

In the bowl, add 2 tablespoons of olive oil, lemon juice, minced garlic, oregano, cumin, salt, and black pepper. Mix well to coat the pork evenly. Cover and marinate in the refrigerator for at least 30 minutes or up to 2 hours.

Step 3

While the pork is marinating, prepare the tzatziki sauce. Grate the cucumber and squeeze out excess water. In a bowl, combine Greek yogurt, grated cucumber, chopped dill, 1 minced garlic clove, and a pinch of salt. Mix well and refrigerate until needed.

Step 4

Thinly slice the red onion and tomatoes. Set aside.

Step 5

Heat a large skillet over medium-high heat and add the remaining 1 tablespoon of olive oil.

Step 6

Cook the marinated pork strips in the skillet for about 8-10 minutes, stirring occasionally, until fully cooked and slightly browned.

Step 7

Warm the pita bread in a dry skillet or microwave to make them pliable.

Step 8

To assemble, spread a dollop of tzatziki sauce on each pita bread. Add cooked pork, sliced red onion, tomatoes, shredded romaine lettuce, and crumbled feta cheese.

Step 9

Fold the pita bread into a pocket or roll and serve immediately.
