Ingredients

  • 1 medium English cucumber
  • 2 cups Cherry tomatoes
  • 0.5 medium Red onion
  • 0.75 cup Kalamata olives
  • 0.75 cup Feta cheese, crumbled
  • 0.25 cup Fresh parsley, chopped
  • 2 pieces Pita bread
  • 3 tablespoons Extra-virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 1 tablespoon Lemon juice
  • 1 clove Garlic, minced
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the pita bread into small triangles or bite-sized pieces. Place them on a baking sheet and drizzle with 1 tablespoon of olive oil. Toss to coat evenly.

Step 3

Toast the pita pieces in the oven for 8-10 minutes or until crisp and golden. Set aside to cool.

Step 4

Meanwhile, dice the cucumber into small cubes and halve the cherry tomatoes. Thinly slice the red onion. Add these to a large salad bowl.

Add the Kalamata olives, crumbled feta cheese, and chopped parsley to the bowl with the vegetables.
