Ingredients

  • 500 g Ground lamb or beef
  • 60 g Breadcrumbs
  • 1 large Egg
  • 2 Garlic cloves, minced
  • 15 g Fresh parsley, chopped
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 400 g Pasta (penne or fusilli)
  • 400 g Canned diced tomatoes
  • 1 large Red onion, finely chopped
  • 100 g Kalamata olives, pitted and sliced
  • 150 g Feta cheese, crumbled
  • 10 g Fresh basil, chopped
  • 1 tsp Lemon zest

Directions

Step 1

Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.

Step 2

In a large bowl, mix together the ground lamb or beef, breadcrumbs, egg, minced garlic, parsley, oregano, salt, and black pepper. Combine until well mixed.

Step 3

Roll the meat mixture into small, bite-sized meatballs (about 2.5 cm in diameter) and place them on the prepared baking sheet.

Step 4

Bake the meatballs in the preheated oven for 15-18 minutes, or until browned and cooked through.

While the meatballs are baking, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
