Ingredients

  • 300 grams Button mushrooms
  • 3 tablespoons Olive oil
  • 2 units Garlic cloves
  • 200 grams Cherry tomatoes
  • 1 medium Cucumber
  • 1 small Red onion
  • 50 grams Kalamata olives
  • 80 grams Feta cheese
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dried oregano
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper

Directions

Step 1

Clean the button mushrooms with a damp cloth or rinse them briefly under water and pat dry. Slice them into even pieces.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the mushrooms and cook for 5-7 minutes, stirring occasionally, until they are golden brown and tender.

Step 3

Mince the garlic cloves and add them to the skillet with the mushrooms for the last minute of cooking. Remove the skillet from heat and allow the mushrooms to cool.

Meanwhile, halve the cherry tomatoes, peel and dice the cucumber, and thinly slice the red onion.
