Ingredients

  • 500 grams Dry lima beans (butter beans)
  • 4 links Sausages (preferably Greek loukaniko or any smoked sausage)
  • 4 tablespoons Olive oil
  • 1 large Yellow onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 medium Carrot, finely diced
  • 1 medium Celery stalk, finely diced
  • 400 grams Crushed tomatoes (canned)
  • 1 tablespoon Tomato paste
  • 1 leaf Bay leaf
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Paprika (sweet or smoked)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (for garnish)
  • 1 liter Water or chicken/vegetable stock

Directions

Step 1

Rinse the dry lima beans under cold water and soak them in a large bowl of water overnight, or for at least 6-8 hours.

Step 2

Drain the soaked beans and transfer them to a large pot. Add fresh water to cover the beans and bring to a boil over medium-high heat. Reduce the heat to simmer and cook the beans until tender, about 45-60 minutes. Drain and set aside.

In a large deep skillet or pot, heat the olive oil over medium heat.

Add the chopped onion, garlic, carrot, and celery. Sauté until softened and fragrant, about 5-7 minutes.
