Ingredients

  • 500 g Cremini or button mushrooms
  • 60 ml Olive oil
  • 30 ml Red wine vinegar
  • 3 pieces Garlic cloves, minced
  • 15 ml Fresh lemon juice
  • 2 tsp Dried oregano
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Red pepper flakes
  • 2 pieces Bay leaves
  • 250 ml Water

Directions

Step 1

Clean the mushrooms by wiping them gently with a damp cloth or rinsing briefly under cold water. Trim the stems if needed.

Step 2

In a medium-sized saucepan, combine water, olive oil, red wine vinegar, minced garlic, lemon juice, dried oregano, salt, black pepper, red pepper flakes, and bay leaves.

Step 3

Bring the mixture to a gentle boil over medium heat, stirring occasionally to combine the ingredients.

Add the mushrooms to the saucepan and reduce the heat to medium-low. Simmer for 10-12 minutes, stirring occasionally, until the mushrooms are tender and have absorbed the marinade.
