Ingredients

  • 1 lb Ground lamb
  • 1 lb Ground beef
  • 1 medium Yellow onion, finely grated
  • 3 Garlic cloves, minced
  • 2 tsp Dried oregano
  • 1 tsp Dried thyme
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1 tsp Ground coriander
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 1 cup Breadcrumbs
  • 0.25 cup Ice-cold water

Directions

Step 1

Preheat your oven to 325°F (163°C) or prepare your rotisserie grill for indirect cooking.

Step 2

In a large mixing bowl, combine the ground lamb and ground beef.

Step 3

Use a clean kitchen towel or cheesecloth to wring out the grated onion to remove excess liquid, then add the onion to the meat mixture.

Step 4

Add the minced garlic, dried oregano, dried thyme, ground cumin, paprika, ground coriander, salt, black pepper, and breadcrumbs to the bowl.

Step 5

Pour the ice-cold water into the mixture, and use your hands to knead everything together until the mixture is well combined and sticky. This step ensures a dense, smooth texture.

Step 6

If using a rotisserie grill: Form the meat mixture into a compact loaf shape and securely thread it onto the rotisserie skewer. Tighten it well to ensure even cooking. Grill over indirect heat for about 60 minutes or until the internal temperature reaches 165°F (74°C). Rotate the skewer occasionally for even browning.

Step 7

If using the oven: Line a loaf pan with parchment paper or lightly grease it. Pack the meat mixture into the pan, pressing down firmly to remove air pockets. Bake for about 60 minutes or until the internal temperature reaches 165°F (74°C). Optional: For a crispier edge, broil on high for 2-3 minutes after baking.

Step 8

Once cooked, allow the gyro meat to rest for 10 minutes before slicing thinly with a sharp knife.

Step 9

Serve the gyro meat in warm pita bread with sliced tomatoes, onions, lettuce, and a generous dollop of tzatziki sauce. Alternatively, serve alongside a Greek salad or rice pilaf for a complete meal.
