Ingredients

  • 4 pieces grouper fillets
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic cloves, minced
  • 2 large ripe tomatoes, diced
  • 1 medium red onion, thinly sliced
  • 0.5 cup kalamata olives, pitted and halved
  • 0.5 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Lightly grease a baking dish with 1 tablespoon of olive oil.

Step 3

Pat the grouper fillets dry with paper towels and place them in the prepared baking dish.

In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Brush this mixture evenly over the grouper fillets.
