Ingredients

  • 2 large ripe beefsteak tomatoes
  • 150 grams feta cheese
  • 100 grams mozzarella cheese
  • 50 grams fresh spinach leaves
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh oregano leaves
  • 6 pieces fresh basil leaves
  • 8 pieces kalamata olives (pitted and halved)
  • 4 pieces crusty bread slices
  • 1 tablespoon unsalted butter
  • 1 piece garlic clove (minced)
  • 0.5 teaspoon black pepper (freshly ground)
  • 0.25 teaspoon sea salt

Directions

Step 1

Preheat a grill pan or skillet to medium heat.

Step 2

Slice the beefsteak tomatoes into 1/2-inch thick rounds and lightly sprinkle both sides with sea salt to draw out excess moisture.

In a small bowl, mix the olive oil with the minced garlic and brush both sides of the tomato slices with the mixture.

In another bowl, crumble the feta cheese and mix it with the black pepper and fresh oregano leaves.
