Ingredients

  • 2 tablespoons Olive oil
  • 500 grams Ground lamb
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic, minced
  • 2 tablespoons Tomato paste
  • 0.5 teaspoons Cinnamon
  • 1 teaspoons Dried oregano
  • 1 teaspoons Dried thyme
  • 250 milliliters Beef or lamb stock
  • 400 grams Canned diced tomatoes
  • 150 grams Frozen peas
  • 1000 grams Potatoes, peeled and cubed
  • 4 tablespoons Unsalted butter
  • 120 milliliters Milk
  • 100 grams Feta cheese, crumbled
  • 1 to taste Salt
  • 1 to taste Ground black pepper
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Heat the olive oil in a large skillet over medium heat. Add the ground lamb and cook until browned, about 6-8 minutes. Drain excess fat if necessary.

Step 3

Add the chopped onion and cook for 3-4 minutes until softened. Stir in the garlic and cook for 1 minute until fragrant.

Step 4

Mix in the tomato paste, cinnamon, oregano, and thyme. Cook for 2 minutes to develop flavors.

Step 5

Pour in the beef or lamb stock and the diced tomatoes. Stir well and simmer for 15 minutes until the mixture thickens slightly. Season with salt and pepper to taste.

Step 6

Add the frozen peas to the mixture and stir. Remove from heat and set aside.

Step 7

While the lamb mixture is simmering, prepare the mashed potatoes. Boil the cubed potatoes in a large pot of salted water for 15 minutes or until fork-tender. Drain and return to the pot.

Step 8

Mash the potatoes with the butter and milk until smooth. Season with salt and pepper to taste.

Step 9

Spoon the lamb mixture into a 9x13-inch baking dish, spreading it out evenly. Crumble the feta cheese over the top.

Step 10

Spread the mashed potatoes over the lamb mixture, smoothing it out evenly. Use a fork to create texture on the surface if desired.

Step 11

Bake in the preheated oven for 25-30 minutes, or until the top is golden and slightly crisp.

Step 12

Remove the shepherd's pie from the oven and let it rest for 5 minutes before serving. Garnish with chopped parsley if desired.
